Much work has been done over the past several decades in the field of neuroscience. Brain patterns do indeed change by those engaged in "mindfulness", whether through meditation or the work of psychotherapy.
In a recently published interview with Krista Tippitt, host of the radio show "On Being", the neuroscientist Richard Davidson shares some of his own insights and discoveries in working with Buddhist monks. Davidson is a professor at the University of Wisconsin-Madison.
